I feel like chicken tonight, like chicken tonight .. isn’t that a song? Maybe, its one I made up in my own head! Well, anyways Winner, Winner, Chicken Dinner…because this one is a definitely a WINNER! Baked Coconut Chicken made with a few simple ingredients …
Preheat oven to 400 degrees
Ingredients
Chicken tenderloins or cut chicken breast into strips
2 large eggs
1/4 c coconut milk
1/2 c all purpose flour
1 cup panko bread crumbs
1 cup shredded coconut
1/2 tsp salt
Make 3 separate dipping bowls by mixing the following …First bowl mix flour and salt. Second bowl combine eggs and coconut milk. Whisk together until well combined. In the third bowl stir together the panko bread crumbs and shredded coconut. Dredge chicken into flour mix and then into milk and egg mix. Then dredge into coconut and panko mix. Either spray a baking sheet with pam or line with parchment paper. Pop in oven and bake for 25 minutes or until no longer pink. Serve with jasmine rice or as an appetizer. Swear it’s better than any Coconut Shrimp recipe and its baked! Delicio-so! ![]()
Note: I almost forgot the most important part, the sweet chili dipping sauce!

Spinach Salad
This salad is a perfect lunch salad! One of my favs…:)
Baby spinach, nutty parmesan (cut into small pieces), cran-raisens, almond slivers or toasted pine nuts, real crunchy bacon is best or you can use hormel bacon bits in jar, chicken, and hard boiled egg. I like to use a tomato base dressing, homemade dressing, or a russian dressing seems to go best. Healthy, Easy, & Tasty!

Protein Breakfast
After a nice workout I felt guilty eating anything other than a healthy breakfast. So, with the ingredients that were already in the fridge I threw together a protein packed breakfast with eggs whites, mushrooms, red bell pepper, onion, spinach, red new potatoes, and chicken! I was a too rushed to take the time to make an omelette so I sauteed the mushrooms, red bell pepper, onion, and spinach in pan. Then, I cut up some left over chicken from last night and threw into the pan. I placed 4 small red new potatoes in the microwave in a ziploc for 3 minutes until soft and cut up and threw into the pan with the rest of the ingredients. Wa-La! Breakfast of Champions! ![]()
