Salmon & Edamame

If you like fish, this might be the easiest meal you ever make and it’s healthy! Salmon has a reputation for being a healthy fish because of the Omega 3 fats and the protein it contains. It also has health benefits assisting with cancer prevention, eye health, cardiovascular health, and skin and hair health. These benefits are all based from the consumption of wild salmon, farm raised salmon is an entirely different kettle of fish.
Maybe that little bit of knowledge will entice you try it! Take a piece of foil, line the foil with sliced lemon, and place the salmon on top of the lemon. Season with salt, pepper, garlic powder, and drizzle with teriyaki. Wrap and close fish in foil and bake in the oven at 350 degrees for 15 to 20 minutes (until desired temperature) and serve with edamame.

Anti-Aging Foods

T.O.D.-(Tip of The Day)…As women we are always trying to age as gracefully as possible at the expense of costly products and cosmetic procedures. I’ve been doing research and it seems it starts in the kitchen. No, I’m not a poster child for always doing the right thing so I’m not going to preach to you but I am going to share with you some nutritious food facts that have anti-aging powers and that help with heart disease and cancer.
1) Leafy Greens-Huge source of fiber, Vitamin C and K, folic acid, Vitamin A (which supports skin cell turnover) and 4 essential minerals: calcium, magnesium, iron, and potassium.
2) Berries-Carry more anti-aging antioxidants than almost any other food. They lower disease risk, help prevent memory loss, and high in fiber.
3) Salmon-Prime source of Omega 3 fatty acids, Vitamin B12, and Vitamin D…all great for fighting heart disease and helping regulate blood pressure.
4) Nuts-Excellent source of protein, magnesium, Vitamin B and E..help with heart disease and cancer.
5) Whole Grains-96% more fiber, magnesium, zinc, chromium, and Vitamins E and B6 then refined grains. Helps prevent heart disease, cancer, diabetes, hypertension, and obesity. Stick with whole grains, brown rice, or quinoa.
6) Yogurt-Low or nonfat yogurt are a great source of B Vitamins, protein, and calcium. It has probiotics-which block out disease-causing germs.
7) Veggies-Carrots, sweet potatoes, squash, etc..help lower risk of cancer, colds, and skin damage.
Try and incorporate proportioned amounts into your daily diet to help with aging and to fight disease!

BBQ Salmon & Artichoke

On a whim I decided to make some salmon and artichoke last night with fruit salsa. I bought the wild caught salmon because they claim its healthier for you but I must say I am a bigger fan of the farm raised. It’s lighter in color and seems less fishy in taste. It’s up to you what you choose based on your taste buds.
First, boil a pot of water for artichoke. Then cut the tip and stem of the artichoke, snip the pointy leaves, cut in half (can do before or after boiling), and submerge in pot to boil with lid for 30 to 45min (until leaves easily pull away). Pull out the water once tender and season with olive oil or butter, lemon, & spices of choice (salt, pepper, garlic, onion salt).
Now on preheated grill place the artichoke face down to to finish cooking so they have the grill marks and flavor. Also, place salmon on grill face down first and then flip & finish cooking with skin side down on grill. Once you flip the salmon skin side down then baste with bbq sauce of choice. I mixed vidalia sweet onion bbq sauce, maple chipotle grill sauce, & vidalia onion fig sauce to brush on my salmon. Cook a total a 8 to 10 minutes.
I made a fruit salsa to top fish with which consisted of diced mango, peach, rainier cherries, jalapeno, black beans (rinsed & drained), lime juice, splash of orange juice, and salt & pepper. YUM!
Also, served with asparagus roasted in the oven on 350 degrees until tender with olive oil, lemon, and season. Plus, fingerling potatoes (which have nutty flavor & compliment fish) @ 350 degrees for 30 to 45 min (until tender) with olive oil, seasoning, and fresh rosemary. Oh, and a cucumber sliced and soaked in vinegar & black pepper its a “southern thing” has a little bite but delish! It was all pretty good! ;)
